Homemade BBQ rabbit Print Recipe |
Ingredients
2 (2.5 lbs quartered) rabbit
Homemade BBQ Sauce
2 tsp butter, melted
1/2 tsp garlic powder
1 cup ketchup
1/4 cup brown sugar
1/4 cup chili sauce ( Chili Sauce Substitute )
2 Tbs Worcestershire Sauce
1 Tbs celery seed
1 Tbs mustard
1/2 tsp salt
1 tsp hot pepper sauce
Simmer all BBQ sauce ingredients on low long enough to allow seasonings to blend and sauce to smooth out.
I baked the rabbit in a covered baking dish with just enough water to barely cover the rabbit. Bake at 300 degrees for 1 hour then 325 degrees for 1 hour. Drain off excess liquid, smother with BBQ sauce, cover and bake at 350 degrees for 1/2 hour. Remove cover and continue baking for another 15 minutes or so.
I used the leftovers by deboning the meat, adding a touch more BBQ sauce and heating on low until heated through. Served on toasted bread and topped with lettuce, tomato, cucumber and sprouts.
